The Mill in the Haymarket first opened in 1988. Don’t be mistaken, we were founded in 1975, and moved locations a couple of times before settling for good into our flagship location on 8th & P. What was once just a single room where Dale roasted the coffee and chatted with customers, has now expanded its footprint on the ground floor of the Stacy Building.

Home to our well-loved café, coffee roasting facility, commercial bakery & kitchen, warehouse, distribution, and corporate offices, this spot is truly the heart of where the magic happens. Most days, you can smell coffee from around the world being roasted throughout the Haymarket.

At this grandaddy Mill, we pride ourselves on being Lincoln’s central welcoming spot to locals and visitors alike. Our staff are the smiling faces always glad to discover where you are visiting from and provide you with a place to grab a delicious beverage. Here you can enjoy our legendary sense of “Nebraska Nice”, the decades-acquired authentic vintage decor, and our ever-popular “dock” for the best people-watching and outdoor seating in Lincoln.
